Last night, we saw the NOMAD team battle it out with the contestants on this week’s epic showdown of Home Cooks Vs Pro Cooks, and we’re still drooling over Lakhan’s incredible rosella and olive oil parfait. Tonight, Nick Holloway returns to MasterChef Australia for the third time. This time, though, he’s ditching the guest judge hat in favour of an apron, and he’s ready to cook up a storm. Joining Holloway will be his Nu Nu team, Mel Schouten and Chris Verinder, in an epic three-course pressure test set by renowned chef Khanh Nguyen, from Aru and Sunda.
Who Is Nick Holloway?
Nick Holloway’s introduction to the hospitality industry was an accident. While studying Engineering at Melbourne University, he washed dishes to pay his way, but quickly fell in love with the energy of the hospitality industry.
Soon enough, Holloway began cooking as a creative outlet. It wasn’t until when he saw Geoff Lindsay speak at a chef’s symposium, though, that he decided to apply for an apprenticeship at Stella.
Holloway made his way through the kitchen, working under Andrew Blake and eventually returning to Lindsay to help open Pearl Restaurant in Richmond, where he remained for four years.
Itching for a sea change, Holloway booked a one-way ticket to Cairns and never looked back. In 2004, he opened Nu Nu, which is now known as one of the best restaurants in the Tropical North, if not Australia. Gourmet Traveller listed Nu Nu in its Top 100 Restaurants, and it was recognised as one of the Regional Restaurants of the Year in 2016 by the Brisbane Times.

In addition to owning Nu Nu, Holloway also owns Numi Ice Cream, an ice creamery in Palm Cove, QLD.
Why Is Nu Nu Famous?
Nu Nu is located in the idyllic Palm Cove, and is not just a tourist favourite — locals also love the open beachfront restaurant.
The menu follows a fine dining format, but the atmosphere is anything but stuffy. Expect a tropical-themed dining room with hanging ferns and a roof garden with ocean views.
The menu channels the seasons, with a focus on seafood, given its location. Think kimchi butter poached reef fish with squid ink noodles in a corn and seaweed broth, and you’ll start to get an idea why Nu Nu tops the list of Good Food Guide Awards and other dining accolades.
