The weekend is nigh and with the further easing of social distancing restrictions comes the opportunity to venture out of the house and visit a friend’s place, pub or bar (exciting!).

But what happens when you’d rather stay inside, having come to rather enjoy spending time at home and occupying oneself with fun indoor activities?

Well, to those seeking out something to do inside that doesn’t involve sourdough bread-making, we have a treat for you. The team at Instagram has suggested a number of enjoyable new activities perfectly suited to every star sign, with the Insta-personalities on the app to help inspire you and show you the way.

STEP BY STEP ALLA NORMA: Traditionally ricotta salata is used, but I like that stretchy creaminess of mozzarella. 1: Burn and blister the eggplant over a flame, or if you have charcoal even better. Once it’s all nicely burnt and smokey, place it in a 200 degree oven and roast it until it’s soft and collapsing on itself. Peel off all the skin and keep the silky flesh. Don’t undercook the eggplant! There is nothing worse. 2: Sauté the garlic in some evoo, add in the cherry tomatoes. Let them cook and break down a little. 3: At the same time cook the pasta. You knew that. 4: Add the Napoli sauce to the pan along with that silky smokey eggplant flesh. Stir them through to combine. You can break the eggplant up a little if needed. 5: Add in the mozzarella, allow it to melt and stretch through the sauce. Add a little of the pasta cooking water if the sauce is getting tight. 6: Add in the cooked pasta and tear up a heap of basil. Toss through with a little splosh of evoo. Check the seasoning!! Serve it up with a nice basil garnish like it’s the 90’s.
