The Sydney Rooftop Bar That’s Hosting Stargazing Nights With an Astronomer

Vivid may be over for 2024, but a new Sydney bar experience centered around the city’s lights is on through August. Rooftop bar Aster Sydney on level 32 of the InterContinental Sydney is hosting a three-night series Astronomy Nights featuring stargazing, paired cocktails and small plates.

“Our philosophy is to create long-lasting, unique experiences for our guests, and where better to do this than against the spectacular views from our rooftop bar, 32 levels high in the sky,” says Jennifer Brown, general manager of Intercontinental Sydney.

The night will start with a glass of Champagne, tuna tartare and three-cheese croquette canapés, which you can enjoy under bar-provided blankets while listening to intergalactic music. Then, you’ll head out onto Aster’s wrap-around balcony, which looks at Sydney Opera House, Harbour Bridge and the city’s skyline.

There, you’ll take turns with other guests to gaze at stars and star maps using high-powered telescopes. Astronomer and astrophysicist Dr. Angel Lopez-Sanchez will guide you through what you’re seeing and share his knowledge.

Once you’ve had your fill of stars, you can cosy up under a blanket at your table again and be treated to your main — your choice of braised short ribs or slow-cooked carrot with wild mushroom and cavolo nero — and two more drinks of your choosing.

“Our team wanted to create a night to remember where guests can indulge in creatively crafted cocktails, artful small plates, bespoke music and a highly personalised service,” says Phoebe Nannetti, director of food and beverage at Intercontinental Sydney.

Created especially for the evening, cocktail Galactic is made with Los Arcos Tequila, Avallen calvadon, kiwi and agave and topped with an aromatic (and aesthetic!) bubble. You’ll also have the choice of 2017 Gheddo Barolo La Morra wine.

Astronomy Nights run Thursday, August 8 from 6:30pm – 8pm, Thursday, August 15 from 7:30pm – 9pm and Thursday, August 22 from 6:30pm – 8pm, and you should book in advance.
