Fried artichokes, cauliflower hummus and mini lamb burgers with tzatziki and spinach are among Darling Pavilion’s Bottomless Lunch menu. Launched in December 2023, the $89 per person lunch is on every Saturday and Sunday from 12pm ‘til 3pm.
Kick off with a margarita made with Altos Tequila before enjoying two hours of free-flowing beer, wine or sparkling, alongside the set menu. Curated by Darling Pavilion’s Head Chef Kyle Quy, 2007 Young Chef of the Year Award winner, the menu aims to take diners on a journey through the Mediterranean region.
Start with smoked salmon chive, scooped up with preserved lemon remoulade flatbread. Next is fried artichokes with roasted garlic aioli, cauli hummus and warm grilled pita and fried baby calamari to dip in smoked paprika aioli.
Also on the menu is a salad of grilled prawns, iceberg lettuce and fennel, drizzled in basil pesto and mayo. For something heartier, tuck into mini lamb burgers with tzatziki and spinach. A vegetarian menu option is also available.
Multimillion-dollar pub Darling Pavilion opened in August 2023, sitting across from Tumbalong Park and the ICC in Darling Quarter. Created by the team behind Newtown Hotel, Universal and The Imperial, the 350-seating venue was conceptualised by celebrated interior designer Michael McCann, responsible for the interiors of Mr Wong and Felix.
It features an outdoor terrace and a light-filled indoor area with white décor, blond wood floors and pops of greenery. A 20-metre stone and marble bar is the focal point of the indoor space.
The pub hosts weekday lunch specials, DJs at night and a funk and soul live duo from 3pm ‘til 7pm every Saturday and Sunday. The Darling Quarter precinct is also home to roughly a dozen restaurants and casual eateries, including Vesta Italian, MuMian Dining and a Gelatissimo.
